RFK Carnival Turkey Legs

INGREDIENTS

BRINE

  • 1/2 cup table salt
  • 1/2 cup brown sugar
  • 2 tbls onion powder
  • 2 tbls garlic powder
  • 2 tbls red pepper flakes
  • 2 tbls poultry seasoning
  • 1 tbls Tabasco
  • 2 bay leaves
  • 3/4-1 gallon water
  • 6 large turkey legs

RUB

  • 2 tbls chili powder
  • 2 tsps steak seasoning
  • 2 tsps paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • olive oil

INSTRUCTIONS

  1. Mix all the brine ingredients in a large container with a lid and add turkey legs. Let sit in brine for 12-24 hours, stirring occasionally.
  2. Prepare charcoal grill for indirect cooking at about 325F. Meanwhile, remove turkey legs from brine, rinse and pat dry. Mix rub ingredients together in a small bowl (except the olive oil). Lightly drizzle olive oil over the turkey legs, then sprinkle all the rub over the legs and gently rub o coat.
  3. Cook over indirect heat (325F) for 45 mins- 1 hour or until thickest part of leg is 165F. Turn legs every 10-15 minutes to cook evenly.
