Ingredients

  • Beef ribs
  • Sweet Mamba or In the Heat of the Spice (2 tbsp per pound)

Preperation

  • Trim excess fat from beef ribs, leave a bit for flavor, this is what makes them delicious.
  • Combine salt, pepper, adobo and cayenne.
  • Sprinkle with olive oil and apply rub over the ribs.

Cook

  • Preheat grill and prepare for indirect grilling (two stage fire) with a drip pan.
  • Place ribs on grill over drip pan and close the lid (cool zone).
  • Cook for about 3 to 3 1/2 hours over a medium low, indirect heat (try to keep the temperature under 265 degrees F/130 degrees C).
